Over the last few years, the whole lower section of the hotel has been completely renovated, re-investing in the 37-year-old charm of the hotel, The Collins Bar overlooks the main city square and has some of the most original cocktails you will find.

Located on the ground floor of the hotel is by far the best-hidden gem of any trip to Adelaide, the Hilton’s very own Coal Cellar + Grill.

This modern, vibrant restaurant gives you the best of South Australian produce with an outstanding menu cooked on the featured charcoal grill.

On the night I was a guest there, we had the luxury of dining on a selection of dishes from across the menu.

A standout on the entree list was the San Chow Bow, full of intense flavour from the chicken mince, crisp lettuce and vegetables. The Apple and Macadamia Duck was an experience while the grilled leek was a great way to take a vegetable that I have no time for and make it delicious.

I could rave on about the whole menu, which is just stunning but who am I kidding, the highlight of the dining experience at Coal Cellar + Grill is none other than The Tomahawk

A 1-kilogram steak on the bone that comes with roasted vegetables and is for you to share. It is simply the most delicious steak you will have, oh and don’t forget to grab a side of the duck fat chips, so good.

As with any great restaurant, the wine list can turn any great food into something you won’t forget and Coal Cellar + Grill has the most amazing wine cellar and its viewable right there in the middle of the restaurant.

Offering wines from the vineyards of the Barossa Valley and McLaren Vale to the olive groves and the Eyre Peninsula, this is South Australia’s ultimate cellar kept at 16 degrees and looked after by its very own Wine Cellar Supervisor.
